I am not sure I would go for angle-bracket shaped food either, but I do share your passion for what is possible with XML, and in particular how we as humans can and will interact with XML structured information.
I am the founder of Altio where we have been working for the past 5 years on the quest to deliver rich desktop applications across platforms and browsers. Our products are based entirely on XML and Java both on the client and the server and are in use today in a variety of applications such as mission-critical real-time financial trading.
I applaud efforts such as XUL, SVG and XForms to define standards for describing user interfaces in XML, and though we are a commercial venture, we are keen to support and promote open initiatives in this space. For our part, we have a team dedicated to ensuring that applications developed for commercial platforms such as MSWin, Mac and Solaris will run identically and unmodified on open source platforms such as Linux/GNOME/Mozilla/Apache/Tomcat hopefully reducing the barriers within corporations to choosing these platforms for commercial client-side use.
